Organic, wild ferment Sauvignon Blanc
The Sauvignon Blanc vines are organically cultivated, and the grapes are harvested using three different methods: some by a green manual daytime harvest, part mechanised, and some at night. The grapes then undergo spontaneous fermentation using natural yeasts, and under controlled temperatures (18-22ºC). Parcels of grapes sourced from different locations are fermented separately, allowing for differences in terroir. Then the wine stays on fine lees for a short time before bottling.
Tasting notes
Intense and herbaceous on the nose, with a hint of mandarin peel. The palate is rich and textured with ripe tropical fruit, a good mineral structure and complexity from lees aging. The finish is long and satisfying.
