Mills & Hills Pinot Noir
Appearance – light red colour, pale ruby
Aroma – cranberry, pomegranate, soft soil
Taste – cranberry juice, hint of oak, raspberry and white chocolate
Conclusion – cranberry meets violet with a hint of soft vanilla and oak
Destemmed in dolav bins, punched down for 9 days, spontaneous fermentation followed by RC212 yeast inoculation, co-inoculated with MLF bacteria, at the end of fermentation the wine was then fermented and strored in Seguin Moreau barrels – where they remained for 9 months. Following this period the wine was then lightly filtered before bottling.
