Blanche De Normandie Eau De Vie
An apple eau de vie; basically, it is distilled French cider from one of the best producers in the country, but as it is not aged, it is not classed as Calvados, and is instead a lively, fresh eau de vie. The stills they use in the Calvados region are very specific, with the pot still often being a wood fired combination of two lambic stills, and then another lambic called a Charentais still. If you are a distillation geek, get yourself over to Normandy.
