Waterford Biodynamic Luna 1.1

Of all the whiskies Mark Reynier has made at his new Waterford Distillery, this is the expression that excites him most. Biodynamics is a system of farming most commonly associated with wine, with many of the most famous wines in the world practising a system of regenerative farming that borders on the spiritual at times, but also can produce fantastic results. We believe this to be the world’s first biodynamic whisky to be released and although we’ve not tried it yet, early reports have buzzed with excitement.

Aged in a combination of new oak, first fill and refill American and European casks from some the most acclaimed wine makers and bourbon producers. 35% First Fill U.S, 17% Virgin US, 26% Premium French, 22% Vin Doux Naturel.

Official Tasting NotesNose –  Plums, apricot jam, fresh fruit salad, cold coffee, lemon drizzle cake, milk chocolate with almonds, fresh soil, bread proofing, brown sugar, herbal tea, hay on the ground after a shower of rain.

Palate – Spice on every level, front, middle, back and in between, white pepper, cloves, green peppers, jalapenos, dark chocolate, liquorice, malted biscuits and peppermint tea, grapefruit.

Finish –  An everlasting heat and spice that’s dry but is mouth-watering, with some mint tea. It has more of a linger and less of a finish
