Winemaking: spontaneous fermentation by the only natural yeast in the grapes. Maceration on the skins for 10 days.
Aging: in French tonneaux and cherry barrels

Beatriz De La Iglesia Garcia, a Spanish girl from Seville and Pierpaolo Badalucco, Sicily, returned to Sicily to manage the family vineyards in the area of Petrosino a seaside village between Marsala and Mazara del Vallo.
Beatriz brought into Sicily some Spanish grape varieties and implanted them in some of her vineyards, creating the ‘Dos Tierras Project’.
In the vineyard , the work is directed to preserving biodiversity through the management of wild plants, the treatments to wild plants are made only when necessary. The second purpose is the equilibrium of the plants . Each vineyard is divided into micro-areas, handled differently depending on the vintage and the development of the plant.
In the cellar of the grapes are de-stemmed by hand, the fermentation is natural and all the masses are pressed with the feet . The wine is not changed at any stage, it is bottled unfiltered.
