Domaine de la Prade White is crafted using organic Chardonnay grown in the Languedoc-Roussillon region of France. Where the team at Oddbird excel is the skill in the de-alcoholising process, which retains all the intensity and juiciness of the wine. Youthful and vibrant, this practically crunches with citrus sorbet, Granny Smith apple and ripe pear. But there’s also a very classy and rounded butteriness in the finish, presumably from the 12 months ageing the wine undergoes.
