Peller Estates Ice Cuvee Sparkling NV

Peller Estates Ice Cuvee Sparkling wine is made from hand-picked Chardonnay and Pinot Noir grapes. It is made in the traditional method.

Peller Estates and the Peller family have been making wine in Niagara Peninsula for 3 generations, and are widely regarded as one of the highest quality and most innovative producers of Canadian Icewine. They also make very good still and sparkling wines too. The sparkling wines are made using the traditional “méthode” and they are bottled Niagara Peninsula VQA. VQA stands for Vintners Quality Alliance and is the Canadian equivalent of  the French AOC or Spanish DO and guarantees the high quality and authenticity of origin for Canadian wines made under that system in British Columbia and Ontario. 

The Peller Estates winemaker is Katie Dickinson who began her wine making career at Peller 2006. Katie left Peller to travel and make vintages around the world, including New Zealand and France, before returning to Peller as winemaker in 2012.

For the Peller Estates Ice Cuvee, individual batches of Chardonnay and Pinot Noir are fermented in tank. A cuvee is made using a selection of these wines which are then bottled with yeast and sugar. After ageing on the lees for approximately 30 months, the bottles are riddled, degorged and a dosage of Icewine (110ml) is added.  Enhanced by the burst of flavour from the Peller Vidal Icewine, a sparkling wine of unique style and finesse is created.
